My weakness in life is macaroni and cheese. I would sell my first born for the perfect bowl of it. I’ve even forgiven my mother for bad Christmas gifts because of it. I even await the day that I am able to do social math to figure out how many pounds of pasta and pasteurized cheese have passed through this resilient body.
Thank baby Jesus for this recipe from Women’s Health, which takes wheat pasta, reduced fat cheddar cheese, and fat free milk and creates a practically guiltless meal. What I love about this recipe is not only the creaminess that the butternut squash brings, but how much it thickens the recipe, filling you up on less food (which adds up over time!). Check it out and let me know what you think!
